This is a really good version of the usual chinese salad.

2 boneless, skinless chicken breasts, FROZEN ( I use chicken tenderloins, about 5)
1/4 cup soy sauce
1/4 cup brown sugar
1 tblsp. lemon juice

On med. heat, cook soy sauce, brown sugar & lemon juice until sugar is dissolved. Add Chicken. LEt cook (uncovered) until liquid is almost gone (about 30 min., turning once). Set aside to cool.

2 tblsp. sugar
1/4 tsp. pepper
1/2 tsp. salt
1/4 cup salad oil (vegetable oil)
2 1/2 tblsp. rice vinegar

Cook all dressing ingredients on med. heat until sugar is dissolved. Chill in fridge.

Fry WONTON skins on med. high heat until lightly brown. Drain on paper towels. Combine shredded chicken (I leave in larger chunks) with about 1 head of torn LETTUCE. Add wonton skins (you can add mandarin oranges if you want) and toss with dressing.
