CREPES (french pancakes!)

These are a family favorite passed down from my Grandma. Good anytime, day or night!

makes 4-5 servings

1 cup flour
1 ½+ cups water (you want it to be THIN!)
4 eggs
1 tsp. Vanilla, if desired

Heat a small amount (about 1 or 2 tsp.) of Crisco in a round skillet. Whisk together all ingredients until thin & smooth consistency. Pour about 1/3 cup batter into pan once Crisco is melted. Quickly swirl batter/pan in a circle to form crepe. Once batter is no longer shiny, flip out onto a plate. Repeat until batter is gone. Serve warm filled with cool whip and fresh/frozen fruit. Roll up and top with powdered sugar. Or serve like traditional pancakes with butter and syrup.
