LIGHT CUT-OUT COOKIES

Our favorite Christmas cookies ever! Tried and true recipe used in our family for at least 40 years. Mom also made them for Valentine's Day, Easter, Halloween & Thanksgiving.


1 c. shortening (use 1/2 margarine for flavor)
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
4 c. flour
1/2 tsp. salt
1 tsp. baking powder
2 Tbsp. milk--more as needed if dough seems dry.

Cream shortening and sugar. Add egg and vanilla and beat well. Add dry ingredients alternately with milk (start & end with dry), mix thoroughly. Roll 1/8" to 1/4" thick on floured board. Cut in desired shapes. Bake at 375 deg. for 6-8 minutes until bottom begins to brown slightly. Frost as desired. (We use Grandma's Creamy Icing)
Recipe doesn't say to chill dough before rolling, but I usually do. Don't overbake! Barely brown on edges is plenty. Recipe can easily be halved.
