DARK CUT-OUT COOKIES (GINGERBREAD)

Another family Christmas favorite, made every year since I can remember. Very mild flavor, not too spicy for little ones. If you want a little more spice, double the amount of ginger, add 1/4 tsp. cinnamon and 1/4 tsp. cloves. Dough is very easy to handle.

1/2 c. shortening
1/2 c. sugar
1/2 c. light molasses
1/2 Tbsp. vinegar
1 beaten egg
3 c. flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt

Bring shortening, sugar, molasses, vinegar to boil. Cool, then add egg. Sift dry ingredients, add to egg mixture; mix well. Chill. Roll and cut out as desired. Bake on greased cookie sheet at 375 deg. for 12-15 min. Frost as desired.(We use Grandma's Creamy Icing) These also make cute snowflakes--cut with 6 pointed star cutter and pipe on snowflake lines.
