Something different from ordinary chili. I served this to family when they came for New Year's, and even the kids liked it. It's flavorful, and you can make it as spicy as you like. It's also very quick & easy to prepare.

1 very large boneless, skinless chicken breast, cut in 1/2" cubes
1 med. onion, chopped
1 clove garlic, minced
1 1/2 tsp. vegetable oil
3 cans (15 1/2 oz.) great northern beans, rinsed & drained
1 can (14 oz.) chicken broth
2 4 oz. cans chopped green chilies
1 tsp. salt
1 tsp. dry oregano
1/2 tsp. pepper (I used 1/4 tsp.)
1/4 tsp. cayenne pepper (I omitted)
1 c. sour cream (I used non-fat)
1/2 c. whipping cream (optional, could use canned milk or just regular milk for lower fat content)

In a large saucepan, saute chicken, onion & garlic in oil until chicken is no longer pink. Add broth, chilies and seasonings. Bring to a boil, reduce heat and simmer uncovered for 15 minutes. Add beans and simmer for another 15 minutes. Remove from heat, stir in sour cream and cream. Serve immediately. Yield 7 servings.
