TACO SOUP

Simple & Hearty. Enough said! Try it!

makes 4 servings ~ cook & prep time: 30 minutes

1 lb. Ground beef
½ onion, dices
1 can kidney beans (undrained)
1 can diced tomatoes (undrained)
1 large can Mexican corn (undrained)
* a few dashes of Cumin, to taste *
Tortilla chips (can use fritos)
Sour cream
Grated cheddar cheese
Olives
Guacamole
Salsa

Saute ground beef & onion in medium pot. Add beans, tomatoes, and corn (with juices). Simmer on low until heated through. Crunch up tortilla chips an place in bottom of soup bowls. Add soup to bowls and serve topped with sour cream, salsa, cheese, olives, guacamole as desired.
