This is a yummy and filling salad that we make on "special" occasions (such as Christmas). You can omit the cottage cheese and mushrooms if you have picky eaters.

makes 6-8 servings ~ cook & prep time: 25 minutes

½ bowl full of spinach - rinsed, drained & torn
½ bowl full of lettuce - rinsed, drained & torn
6 slices of bacon, cooked & crumbled
1 cup grated mozzarella cheese
1 cup cottage cheese
1 cup grated swiss cheese
½ cup sliced fresh mushrooms (optional)

Poppy Seed Dressing:
1 cup oil
½ cup red wine vinegar
½ cup sugar
½ tblsp. Dry mustard
1 tblsp. Poppy seeds
1 tsp. Salt

Mix salad ingredients and toss well. Mix together dressing ingredients and pour over salad. Toss & serve!
